Preheat oven to 400 degrees. (Note: depending on your oven, you may want to increase the temperature to 425 degrees around half-way through the cooking time to obtain a more crisp exterior on the potatoes.)
In a small bowl, whisk together Herbes de Provence seasoning, salt, and oil until well combined. Set aside while you prepare the next steps.
Wash potatoes under water and scrub to remove dirt and debris. Cut off any unwanted pieces. Cut potatoes into roughly even-sized chunks, around 1" in size.
[Note: the cut of the potato will influence baking time. For more crisp potatoes, use smaller pieces at longer baking time.]
Place cut potatoes into bowl with oil and seasoning mixture. Make sure to coat the potatoes thoroughly in the Herbes de Provence seasoning and oil.
Bake potatoes as 400 degrees Fahrenheit for approximately 40 - 50 minutes, or until potatoes are soft on this inside and crisp on the outside.
Transfer Roasted Potatoes to a bowl and garnish with parmesan cheese, lemon, chives, butter, and salt and pepper, all as optional to your liking. Our favorite way is to keep it simple and use some extra salt with a squeeze of lemon juice right before serving to keep them crispy and over-fresh.
These potatoes are super versatile - you can use the recipe and exchange the Herbes de Provence seasoning for other seasoning, depending on what you'll be serving.
